I need help re extremely sensitive skin!?

I have etremely sensitive skin and I'm usually good with Dove. If the Dove starts to itch at all, I switch to Aveeno for awhile. For whatever reason, the more "organic" a product is, the more it irratates me--and that works in the synthetic direction as well!
